Starting on 1 October, the Brasserie du Lausanne Palace will offer an original selection of thirty Chasselas wines, served by the glass. Pierre-Marie Faure, sommelier at the Lausanne Palace and mastermind behind this initiative, hails from Charentes and is now championing the virtues of this flagship grape variety from the UNESCO-recognised terraced vineyards of Lavaux: "I find it very interesting to offer it with a main course and not just as an aperitif. I would even venture to suggest an orange wine version by Anne-Claire Schott, paired with caramelised Gruyère cheese." "

Prices start at 7 Swiss francs, for example for a rare Gutedel from Urs Jauslin in Basel – uncommon in French-speaking Switzerland – and go up to 49 Swiss francs for a 1985 Dézaley Grand Cru from the Dubois brothers in Cully. This nectar offers a fabulous journey, with its cumin nose and deep aromas of pear and truffles. It pairs perfectly with a bouchée à la reine by chef Guillaume Soares.

This is a wonderful initiative, reminiscent of that of Julien Ayer, from the restaurant Le Pérolles in Fribourg, who has been offering a wine list dedicated to Vully wines since last year. More than 1,200 restaurants have been awarded the Swiss Gourmet label by Swiss Wine for the quality of their wine lists showcasing Swiss terroir.
